Ingredients
1 Turkey of about 10 pounds (Approx 4.5 kg)
For Butter mix
- 1 cup salted butter
- 1/2 cup chopped parsley
- 2 tbsp Italian seasoning
- juice of 2 small lemons
- 1 tbsp garlic paste
- salt to taste
- pepper to taste
For Cavity stuffing
- 4 sprigs of thyme
- 4 springs of rosemary
- 4 sprigs of sage
- 2 lemons cut into wedges
- 1 onion cut into wedges
- 1 whole garlic
For Dry rubbing
- 1 tbsp adobo seasoning
- 2 tbsp Montreal chicken seasoning
- 1 tbsp smoked paprika
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 2 tsp black pepper
- 2 tsp rubbed sage
For stuffing
- 1 loaf of bread, such as white or whole wheat, cubed and left out to dry
- 1 onion, finely diced
- 1 stalk of celery, finely diced
- 2 cloves of garlic, minced
- 1/4 cup of melted butter
- 1/4 cup of chicken broth
- 1 egg, beaten
- 2 teaspoons of dried thyme
- 1 teaspoon of dried sage
- Salt and pepper to taste

Preparation
For Butter mix
Put all ingredients we take for butter mix in a bowl
Mix well
For dry rubbing
Mix all ingredients which we take for dry rubbing
For Turkey
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
Rinse the turkey and pat it dry with paper towels. Place it in a roasting pan.
Stuff half the butter mix under the skin. From the outside, gently massage the butter around the breasts so that the meat is evenly covered. Put the remaining butter all over the skin of the turkey.
Apply dry seasoning mix all over the skin, under the skin, and in the cavity, and Keep aside for 1 hour.
After 1 hour Stuff it with the mixture we made for cavity stuffing.
If you want to stuff the turkey, fill the cavity with your desired stuffing ingredients though I prefer to make the stuffing separately. Make sure not to overstuff the turkey, as this can cause it to cook unevenly.
Tie the turkey’s legs together with cooking twine to help keep its shape while cooking.
Method
Place the turkey in the preheated oven and roast it for approximately 15 minutes per pound, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
Baste the turkey every 30 minutes with the pan juices to help keep it moist.
Once the turkey is cooked, remove it from the oven and let it rest for at least 20 minutes before carving. This will allow the juices to redistribute and make the meat more tender.
Your turkey is ready.
For Stuffing
- Preheat your oven to 350 degrees Fahrenheit.
- In a large skillet, heat the butter over medium heat. Add the onion, celery, and garlic and sauté until the vegetables are softened about 5 minutes.
- In a large bowl, combine the dried bread cubes, cooked vegetables, chicken broth, egg, thyme, sage, salt, and pepper. Mix until everything is well combined.
- Transfer the stuffing mixture to a greased baking dish and cover it with foil.
- Bake the stuffing in the preheated oven for 30 minutes, or until it is heated through and the top is golden brown.
- Serve the stuffing hot, alongside your Christmas turkey. Enjoy!
